Ragstone
Product description
Ragstone has a dense and quite firm texture and savoury, lactic and lemony flavours. The goat's cheese is named after Ragstone Ridge in Kent where it was first made before Neal's Yard Creamery relocated its dairy to the village of Dorstone in Herefordshire. Cheesemaker Charlie Westhead has managed to find a source of kid rennet to use when he makes Ragstone, which he feels is more suitable and produces a finer flavour than calf rennet when making a goat's cheese. Ragstone won a Silver medal at the 2012 British Cheese Awards. Match this cheese with white wines or sparkling wines.
